Course Description

The Oregon Wine Industry Field Day
We will spend the day hosted by two of the leading experts on the Northern Willamette Valley Appellation and sub appellations.  We will learn what makes the micro-climates unique in this region, what is required in terms of land use policy and viticulture practices and what business framework have accounted for the remarkable success of the industry. We will travel to 3-4 well-known vintners, some small, some large and some that serve only a very small private market of followers. We will have an opportunity to sample their success!


Organic Foods Field Day at Ayers Creek Farm, Gaston, Oregon
This daylong field trip to Ayers Creek Farm will provide an opportunity to understand the inner workings of the local organic food supply chain, from the growers to the restaurants and farmers markets that are the end-users. We will learn what it takes to create an exemplary organic farm that provides first class ingredients to the best restaurants in the region.  We will also learn what it takes to restore the land and recover heirloom seeds from around the world that are especially suited to multiple local microclimates. Finally, we will sample what we see and hear during our hosted lunch provided by Ayers Creek.
